How hard is it to get into Culinary school?

I Want to take a year off after I graduate and work in a restaurant for a year then go to culinary school. Planning on graduating with a 3.0, and attending the culinary program for the school which is 3 class periods a day. It seems like that would be fine, but some reassurance would be nice.

There are still several people on this planet who do not have their own television cooking shows. Luckily, they have all found an outlet on YouTube. And some of them are finding an audience. Hundreds of people who have been accepted into the YouTube’s Partner Program are now making more than $100,000 a year for letting the site run ads along the bottom of their videos, and many of these new partners have channels that involve food. YouTube has even started to develop emerging culinary talent: this spring it gave $35,000 to Kwangsook “Maangchi” Kim, a 54 year old Korean-American grandmother who is using the money to bounce around the world adding kimchi to various dishes. YouTube is helping people like Maangchi as the site tries to aggressively take on television by catering to a world of niche interests-and selling niche advertising to those viewers. The shows do get pretty niche.

Malva parviflora (MP), known in Mexico by the name of “quesitos” or “malva”, is popular due to its culinary and medicinal properties. Diabetic rats were treated with the hexane, chloroform and methanol extracts of the M. parviflora leaves for 28 days and a set of biochemical parameters were studied including: glucose level, total cholesterol, triglycerides, lipid peroxidation, liver and muscle glycogen, superoxide dismutase, catalase, glutathione peroxidase and glutathione reductase. We also looked into liver function by determining glucose-6-phosphatase, glucokinase and hexokinase activities, and the effect of the extracts on insulin level and protein glycation. As a result we found that with the hexane extract the blood glucose level, serum biochemical parameters, hepatic enzymes, thiobarbituric acid reactive substances, glycosylated hemoglobin, advanced glycation end products, and insulin level were restored in streptozotocin induced diabetic rats to nearly normal levels. We conclude that the hexane extract of M. parviflora leaves can efficiently inhibit insulin resistance, lipid abnormalities and oxidative stress, indicating that its therapeutic properties may be due to the interaction plant components soluble in the hexane extract, with any of the multiple targets involved in diabetes pathogenesis.

Open Question: A flavorful semi-healthy meal?

I am working on becoming a chef and going to college for culinary. Other then that I am going to the grocery store tomorrow. What is a good meal I can practice cooking. That I may keep as leftovers for 3-4 four days (for lunch at work).
It can be as complicated as it may be. With consideration it is going to sit in the refrigerator and preheated in a microwave I don’t want to be tired of eating it:)
