Pierre, Mandarin Oriental Hong Kong: Our Grand Finale
I was out on a walk in Chinatown last weekend and noticed a peculiar sign at the back of the flower market. It read: ” Please leave all your personal problems behind when you leave home for work.”What a very odd place for such a sign, I thought. I could have sworn that it was directed at me. I went

Open Question: Should I cancel my deposit?

Hi, I applied to LC to study elementary education and payed a $300 deposit in Feburary. I can cancel that deposit and get it refunded up until May 1 (obviously right around the corner) and I need some help…
I didn’t get the financial aid I was expecting and other things have happened that I has caused me to start to rethinking my major choice all together… LC is quite expensive and without the aid I thought I would get, I can’t really afford the college anymore without high student loan amounts.
Should I call and cancel my deposit if I’m not positive that I want to go there any more? Also I’m not positive what major I would switch to, but if I do it will be something that I can get through a community college; such as Early Childhood Development, Business, or Culinary Arts…
Is there someone on campus that I could call and discuss this with? Do you think they would be okay with helping me if they thought helping meant they would loose a potential student? If I shouldn’t talk to them who else should I talk with? I am a first generation college student so my family can’t help me but so much considering they don’t know anything about the college process so I feel alone in this and just don’t know what to do. It’s just super overwhelming!!! :(

Resolved Question: am i doing the right thing by leaving my education to become a chef?

i have nearly finished my first year of sixth form (college for people outside britian) ,so im nearly 17, and i’ve found it really hard generally. im just about getting C’s and D’s in my subjects. recently i been thinking that i have a passion for cooking, then why dont i go to culinary school and train to become a professional chef? am i doing the right thing by leaving college at the end of the year to pursue this as i dont think i am actually good at anything else, plus i will be doing something i love. i havnt told my parents yet that i am planning this so i guess soon i may have to break it to them.
and at the moment im studying economics, maths, history and sociology - totally unrelated to cooking lol

Increasing consumption of ultra-processed foods and likely impact on human health: evidence from Brazil.

Public Health Nutr. 2011 Jan; 14(1): 5-13
Monteiro CA, Levy RB, Claro RM, de Castro IR, Cannon G

To assess time trends in the contribution of processed foods to food purchases made by Brazilian households and to explore the potential impact on the overall quality of the diet.Application of a new classification of foodstuffs based on extent and purpose of food processing to data collected by comparable probabilistic household budget surveys. The classification assigns foodstuffs to the following groups: unprocessed/minimally processed foods (Group 1); processed culinary ingredients (Group 2); or ultra-processed ready-to-eat or ready-to-heat food products (Group 3).Eleven metropolitan areas of Brazil.Households; n 13,611 in 1987-8, n 16,014 in 1995-5 and n 13,848 in 2002-3.Over the last three decades, the household consumption of Group 1 and Group 2 foods has been steadily replaced by consumption of Group 3 ultra-processed food products, both overall and in lower- and upper-income groups. In the 2002-3 survey, Group 3 items represented more than one-quarter of total energy (more than one-third for higher-income households). The overall nutrient profile of Group 3 items, compared with that of Group 1 and Group 2 items, revealed more added sugar, more saturated fat, more sodium, less fibre and much higher energy density. The high energy density and the unfavourable nutrition profiling of Group 3 food products, and also their potential harmful effects on eating and drinking behaviours, indicate that governments and health authorities should use all possible methods, including legislation and statutory regulation, to halt and reverse the replacement of minimally processed foods and processed culinary ingredients by ultra-processed food products.

What kind of jobs can I land with a culinary or patissierie certificate from my local community college?

Tuesday, April 12th, 2011
Cottontail13 asked:

I’ve been in sales for the past 12 years and want to do something new. I’ve always loved to cook and want to learn/ evolve by getting a certificate of culinary arts at our community college. My hesitation is that I have a family and would like to work standard business hours (8a-5 or 6p, Mon-Fri). Is that possible? What are some of my options?
