Bermuda Spotlights Culinary Diversity and Value During Inaugural Restaurant Week 2012

Nutrient compositions of culinary-medicinal mushroom fruiting bodies and mycelia.

Int J Med Mushrooms. 2011; 13(4): 343-9
Ulziijargal E, Mau JL

Mushrooms (including fruiting bodies and mycelia) are a food with high nutritional value. This article summarizes the results of proximate composition studies of 38 fruiting bodies and 19 mycelia of 32 species of culinary-medicinal mushrooms from genera Agaricus, Agrocybe, Antrodia, Auricularia, Boletus, Clitocybe, Coprinus, Cordyceps, Trametes, Dictyophora, Flammulina, Ganoderma, Grifola, Hericium, Hypsizygus, Inonotus, Lentinus, Morchella, Pleurotus, Sparassis, Termitomyces, Tremella, and Tricholoma. Based on the proximate composition, most fruiting bodies and mycelia are low in fat and rich in protein and dietary fiber (DF); however, some are rich in soluble polysaccharides and others are rich in crude fiber. Due to the high amount of DF present, the energy provided by 100 g of dry fruiting bodies and mycelia is 46.96-292.37 kcal and 195.84-373.22 kcal, respectively. The energy (100 g) is classified into four levels: first level of >300 kcal, second level of 200-300 kcal, third level of 100-200 kcal, and fourth level of

Open Question: what should i do about these two guys?

Tuesday, December 27th, 2011
Open Question: what should i do about these two guys?

I had some problems with my ex bf and we broke up but we were still living together. I started dating someone else ( guy #1) and everything was good with him until he pulled a few stunts
1. telling me to walk out of a hotel room that we had spent the night in together first because the receptionist was flirting with him and he didn’t want the receptionist to see us together
2. continuously calling me a friend to people when we were supposed to be in a relationship
3. making me wait outside of his house until his sister falls asleep to bring me inside one night. ( hes 23 but acts like a high schooler sometimes
4. He also doesn’t want marriage like i do after im done with college but he does have some
positives; he has a degree, fun to be around, outgoing etc
After all of this i kind of got back with the ex( guy #2) he introduced me to his family on Christmas and i felt very welcomed and i liked all of them, i want marriage after im done with college and he wants the same. He is 29 but he doesn’t have a degree but he has a culinary arts certificate and he wants to go to bck to college after he gets his finances together and stuff. he is always there for me and he told me that if i decided to go back with the other guy he would still be there for me..The other guy said that if i go bck with the ex he wants nothing to do with me because he cannot be friends with someone he was intimate with. I know that i love guy #2 but i still like guy #1 despite all of those things he pulled. I think i want guy #2 because he wants commitment and i see what he can become and do in life. His potential and i know he is the type of guy that will be there for me regardless of who i decide to be with and who has been a true friend through thick and thin. Guy #1 wanted to start a relationship really fast without hardly knowing me and it caused some confusion and issues between us. I feel that he wants to be friends with benefits but is afraid to label it that. I feel that he is a great catch but doesn’t want commitment. i really dont know what to do. 75 % of me feels like i should forget guy #1 and stick with 2 and the other part feels as tho i should give guy #1 a second chance. Please help me.

Variation in Physical and Chemical Characteristics of Common Bean (Phaseolus vulgaris L.) Grain along a Domestication Gradient.

Chem Biodivers. 2011 Dec; 8(12): 2211-25
Peña-Valdivia CB, García-Nava JR, Aguirre R JR, Ybarra-Moncada MC, López H M

The objective of this study was to compare six samples of Mexican wild common bean (Phaseolus vulgaris L.) against three landraces and three improved cultivars with respect to physical and chemical attributes, and the culinary quality potential of their grain. A completely randomized experimental design was used to characterize the twelve genotypes. Data were analyzed by analysis of variance and pair-wise comparison of the treatment means by the Tukey test. In addition, correlation and principal-component analysis (PCA) were carried out using twelve characteristics of raw and four of cooked wild and domesticated grains. The results show a larger variability of the physical and chemical characteristics in wild than in domesticated beans. The PCA confirmed that grain gigantism was the main physical characteristic resulting of domestication, whereas the protein and tryptophan contents tended to be higher in wild than domesticated genotypes. Some wild samples from Chihuahua and Durango, Mexico, showed to be a genetic resource to improve food quality, because of their richness in minerals, protein, lysine, tryptophan, and dietary fibers.

Monday, December 26th, 2011
jesse asked:

I love culinary and I would love to learn how to cook different things and to know how to do pastry and things like that. I love to cook and I love to bake, but on the other hand I love messing with computers and the money isn’t bad either. But should I do both or will it be a waste? How is culinary really like and the hours they work? What about computer maintenance? I don’t know if culinary is something I just want to know how to do? Any advice will help

Potential activity of aqueous extract of culinary-medicinal Lion’s Mane mushroom, Hericium erinaceus (Bull.: Fr.) Pers. (Aphyllophoromycetideae) in accelerating wound healing in rats.

Int J Med Mushrooms. 2011; 13(1): 33-9
Abdulla MA, Fard AA, Sabaratnam V, Wong KH, Kuppusamy UR, Abdullah N, Ismail S

This study was conducted to evaluate the effects of topical application of aqueous extract of Hericium erinaceus fruiting bodies (HEFB) on the rate of wound healing enclosure and histology of the healed wound. Five groups of male Sprague-Dawley rats were experimentally wounded in the posterior neck area. A uniform wound area of 2.00 cm in diameter, using a circular stamp, was excised from the nape of the dorsal neck of all rats with the aid of a round seal. The animal groups were topically treated, respectively, with 0.2 mL each of sterilized distilled water (sdH2O); Intrasite gel; and 20, 30, and 40 mg/mL HEFB. Macroscopically, those rats whose wounds were dressed with HEFB and those in the Intrasite gel-treated group healed earlier than those treated with sdH2O. Histological analysis of healed wounds dressed with HEFB showed less scar width at wound enclosure and the healed wound contained fewer macrophages and more collagen with angiogenesis, compared to wounds dressed with sdH2O. In conclusion, wounds dressed with HEFB significantly enhanced the acceleration of wound healing enclosure in rats.
