You are going to learn more and faster by doing. School is best for most everything, but in your case, I would make enough cupcakes to pay for school.

If I were you I would take at least some basic baking/pastry courses. As well as some nutrition. You could even do a nurtitional assistant if you wish instead of a Bachelors or associates.
Also I would try to find a bakery to work in while doing school. Even if it is a bakery in a deli of a large grocerry store. ANY kind of experience is better than nothing.
