Culinary Arts focuses mainly on studying basic cooking methods. Braising, frying, grilling, meat fabrication, the making of stocks and sauces, etc. As you advance you learn more complex techniques.

Baking and Pastry is the opposite. Instead of learning basic cooking methods, you learn baking methods and things like cakes, pies, plated desserts, making pastries, mousses, icing, etc.

Sometimes schools offer classes with a little cross-training, where a pastry student can take a BASIC beginner’s cooking class, or a culinary student can take basic baking, but it’s not as detailed as the full program.
